
Ingredience:
1 pound of dried black eyed peas
1/2 pound of smoked ham, or sausage cut into cubes
1 medium onion diced
4 small carrots peeled and sliced
1 1/2 cups celery, sliced
2 dried red chiles, or sprinkle chili pepper seeds
2 small bay leaves
1 1/2 tablespoons bacon bits
1/2 teaspoon of dried thyme leaves crushed
1/4 teaspoon ground black pepper
1 teaspoon of salt or to taste
1/3 cup of minced fresh parsley
Directions:
Sort peas and rinse. Place peas in a 6 quart slow cooker. Add remaining ingredients except salt and minced parsley.
Cover and cook on LOW for 10-12 hours or until peas are tender. Stir in sald and parsley. Ladle into soup bowls!
Scott compared this recipe to Black Bart's black eyed pea soup when he first tasted it! So if it makes him happy! It makes me happy, and Randy had 3 bowls during 1 sitting! Pretty hearty and yummy! :)
