Twice Baked Potatoes!


Ok, this isn't my recipe, I found it online. I wanted to try something different last night and since I have more time to cook over the weekend then I do on week days I thought I'd make twice baked potatoes.




Here goes:

1. Scrub 4 large lovely potates, and place them directly on the oven rack at 350 degrees for 1 hour.

2. Meanwhile, fry up 8 pieces of bacon, then let them cool and crumble into bacon bits.

3. Pull them out of the oven and let them cook for ten minutes.

4. While cooling prepare:

1 cup of sour cream
4 table spoons of butter
1/2 teaspoon salt
1/2 teaspon pepper
1 cup of shredded cheese
1/4 a cup of chopped green onions....or add to your own liking.


5. Scoop out potato from potato skins into a large mixing bowl. Place potat skin on a baking sheet.

6. add the ingredients in step 4 and blend with a hand blender. When texture is smooth, respoon mixture into potato skins.

7. top with more cheese and bacon bits, then place back in the oven for 15 more minutes at the same temperature noted above.
